22 - 2-3 tbsp water, as needed for consistency

# How-To Steps:

01 - Combine diced chicken, olive oil, paprika, garlic powder, salt, and pepper in a mixing bowl. Toss until evenly coated.
02 - Heat a skillet over medium-high heat. Add seasoned chicken and cook for 7-8 minutes, stirring occasionally, until golden brown and cooked through with an internal temperature of 165°F. Transfer to a plate and set aside.
03 - While chicken cooks, chop cucumber, slice bell pepper, halve cherry tomatoes, shred cabbage, and slice avocado. Keep vegetables refrigerated until assembly.
04 - Place avocado, Greek yogurt, olive oil, lime juice, garlic, salt, and pepper in a blender. Blend until smooth and creamy, adding water 1 tablespoon at a time until desired pourable consistency is achieved.
05 - Divide romaine lettuce evenly among 4 bowls. Arrange cucumber, bell pepper, tomatoes, red cabbage, avocado slices, and cooked chicken on top of lettuce in sections.
06 - Drizzle avocado dressing generously over each bowl. Top with shredded cheese, pumpkin seeds, and fresh cilantro. Serve immediately with lime wedges on the side.

# Expert Tips:

01 -
  • The creamy avocado dressing makes everything taste like a restaurant meal without any hidden sugar
  • You can prep all the vegetables ahead and assemble in under five minutes
02 -
  • Over-blending the avocado dressing can make it bitter, so pulse just until smooth
  • Let the chicken rest for a couple minutes after cooking so it does not lose all those juices when you cut into it
03 -
  • Room temperature avocado blends into a much smoother dressing than cold avocado
  • Adding a pinch of cumin to the chicken seasoning gives it a subtle smoky depth
