01 - Line a baking tray with parchment paper and arrange half the cookies flat side up on the prepared surface.
02 - Using a small ice cream scoop or tablespoon, place one scoop of softened vanilla ice cream onto each cookie base.
03 - Top each ice cream portion with a second cookie, pressing gently to spread the filling evenly to the edges.
04 - Immediately roll the exposed ice cream edges of each sandwich in the sprinkles to coat completely.
05 - Return the assembled sandwiches to the lined tray and freeze for at least 1 hour until firm enough to handle.
