- Preheat your oven to 425°F. Line a baking tray with parchment paper. In a large bowl, toss the sweet potato fries with 2 tablespoons olive oil, 1 teaspoon smoked paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Spread the seasoned fries in a single layer on the prepared baking tray.
- Bake the sweet potato fries for 25–30 minutes, flipping them halfway through, until they are crispy and golden brown.
- While the fries are baking, combine the ground turkey, finely chopped onion, minced garlic, chopped fresh parsley, Dijon mustard, Worcestershire sauce, smoked paprika, salt, and black pepper in a mixing bowl. Mix gently until all ingredients are just combined; avoid overmixing.
- Divide the turkey mixture into 4 equal portions and shape them into burger patties.
- Heat 1 tablespoon olive oil in a large skillet or grill pan over medium heat. Cook the turkey patties for 5–6 minutes per side, or until they are golden brown and cooked through. Ensure the internal temperature reaches 165°F.
- If desired, lightly toast the whole wheat burger buns.
- To assemble, place a lettuce leaf, cooked turkey patty, tomato slice, red onion ring, and pickle slices on the bottom half of each bun. Add mayonnaise and ketchup if preferred, then top with the other half of the bun.
- Serve the turkey burgers immediately with the crispy sweet potato fries on the side.
